Dal bati is a popular dish in Rajasthan. Dal is prepared using tuar dal, moong dal, chana dal, masoor dal and urad dal. I have taken the above dals to make the delicious dal of Dal-Bati. Batis are prepared from whole wheat flour and semolina usually.

Ingredients and spices that need to be Prepare to make Dal Bati:

  1. For Dal
  2. 1/4 cup - Yellow Moong Dal
  3. 1/4 cup Chana Dal
  4. 1/4 cup Masoor Dal
  5. 1/4 cup Tuvar Dal
  6. 2 tbsp Urad Dal
  7. 1/2 tbsp ghee
  8. 1/4 tsp garam masala
  9. 1/4 tsp turmeric powder
  10. 1/4 tsp coriander powder
  11. 1 bay leaf
  12. 1/2 cup chopped onion
  13. 1 cup chopped tomatoes
  14. 1 tsp minced garlic
  15. 1 tsp grated ginger
  16. 1 green chilli chopped
  17. 2 tbsp green coriander
  18. For tempering
  19. 1 tbsp ghee
  20. 1/3 tsp mustard seeds
  21. 1/2 tsp cumin seeds
  22. 1 pinch asafoetida
  23. 1/3 tsp cinnamon powder
  24. 2 curry leaves
  25. 1/3 tsp Kashmiri Red Chili Powder
  26. 1 dry red chilli
  27. For Bati
  28. 1 cup whole wheat flour
  29. 1/4 cup semolina
  30. 3 tbsp melted ghee
  31. 1/2 tsp salt
  32. 2 tbsp milk
  33. as required Water to knead

Steps to make to make Dal Bati

  1. Wash and rinse dals. In a pressure cooker, heat ghee. Fry onion, ginger, garlic and green chilli for 2 minutes. Then, add chopped tomatoes, salt, turmeric and all dry masalas.
  2. Add 3 cups of water and soaked dals. Pressure cooker for 3-4 whistle. Keep to cool down.
  3. In a tadka pan, heat ghee. Add cumin, mustard seeds, hing, red chilli powder and dry red chillies. Saute for a few minutes, then add the tadka to the cooked soft dals.
  4. To make Bati, add the ghee and salt to flour and semolina. Make like crumbs with your palm. Then, add milk and the required amount of water to make a tight dough. Divide the dough to balls. Press at the centre lightly.
  5. Heat 1 tsp ghee in a pressure cooker. Keep the flame low. Add the Bati balls. Cook with pressure cooker cover without rubber and lid. It will take 7-8 minutes to cook the Batis.
  6. Serve Bati with mixed dal, papad, ghee, chopped onions and green chillies.
