- À l'aide d'une poche à douille, former 2 cartouchières et 2 cercles de diametre 18 cm.
- Saupoudrer le sucre glace, puis enfourner pour 10 minutes à 180°c.
- Crème pâtissière: faire blanchir les jaunes et le sucre, ajouter la maïzena.
- Porter le lait à ébullition avec la vanille, verser le lait sur le mélange précédent.
- Remettre à cuire sur feu doux et faire epaissir sans cesser de mélanger. Ajouter le beurre et filmer.
- Réhydrater la gélatine, faire chauffer les 6 cuillères de la crème, diluer la gélatine dans la crème, mélanger la avec la crème pâtissière.
- Monter les 600 gr de crème liquide en chantilly, ajouter la crème pâtissière.
- Montage: disposer la cartouchière autour du moule (d= 20 cm) et le cercle au fond.
- Disposer la moitié de la crème, puis parmeser de morceaux de cerises.
- Disposer le 2 eme cercle sur les cerises et ajouter le reste de la crème, puis parmeser de cerises.
- Reserver au congélateur 2h et décorer
