- 100 g beurre

- 7 g gélatine en feuilles

- 300 g philadelphia
- 300 g crème liquide
- 12 oreo®
- ➢ DÉCO
- 30 cl crème liquide
- 1 gousse vanille
- 50 g sucre

Instructions to make to make Cheesecake Oreo®
- ➢ LA BASE SABLÉE Ecraser finement les oreo®. Faire fondre le beurre et le verser sur les oreo®. Mélanger. Chemiser un cercle à pâtisserie de rhodoïd ou à défaut prendre un moule à charnière puis verser le mélange dans le fond du cercle, tasser et lisser. Réserver au frais.
- ➢ L’APPAREIL À CHEESECAKE Placer la gélatine dans un bol d’eau froide. Verser le lait dans une casserole et le porter à ébullition. Pendant ce temps fouetter ensemble le jaune d’oeuf et 30g de sucre jusqu’à ce que le mélange blanchisse. Verser le lait bouillant sur le mélange jaune d’oeuf/sucre tout en fouettant.
- Remettre le mélange dans la casserole et faire chauffer sur feu moyen jusqu’à ce que le mélange épaississe sans jamais cesser de fouetter. Couper la cuisson et ajouter les 90g de sucre restant et la gélatine essorée. Mélanger. Laisser refroidir un peu.
- Verser dans un grand saladier puis ajouter le philadelphia. Fouetter bien le mélange. Fouetter la crème en chantilly bien ferme. Incorporer délicatement la crème fouettée au mélange à base de philadelphia. Concasser les oreo® grossièrement et les incorporer dans l’appareil à cheesecake, mélanger délicatement. Verser la préparation dans le cercle sur la base biscuitée. Réserver au réfrigérateur au moins 3h, voir toute une nuit.
- Le lendemain, décercler le cheesecake. Monter la crème en chantilly avec une gousse de vanille et le sucre. Puis décorer le cheesecake et répartir les oreo®.
