- 3 cups Whole wheat flour

- 1/2 tsp Turmeric powder
- 1 tsp Amchoor powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- 1 tsp Kasoori methi
- as required Fresh coriander leaves for garnishings
- For Wheat Halwa
- 1 cup Wheat flour
- 3-4 tbsp Desi ghee
- 3/4 cup Sugar
- 3 cups Water
- as per taste Nuts to garnish (optional)
Steps to make to make Naturally Painted Pooris with Aloo Curry and Halwa
- For Aloo curry, grind tomatoes, ginger and green chillies to a thick paste. Heat oil in a pressure cooker, add jeera let it get roasted a bit. Add tomato paste and cook.Add salt,red chilli powder, turmeric powder, coriander powder,amchoor powder and cook nicely. Add little water so that all the masalas get cooked with tomatoes
- Now take the peeled boiled potatoes, slightly break them with your hands, mash few potatoes and few keep big chunks of it and add it to the masala.Add more water to it and pressure cook for one or two whistles so that all the potatoes gets cooked in that masala. Open the lid when cooled. Add kasoori methi,coriander leaves and garam masala.Your bhaji is ready to accompany the colourful pooris!!
- Let's make halwa, in a deep Pan add ghee and flour. Cook on the low to medium flame till the flour gets roasted nicely and you get a beautiful roasted aroma in your kitchen.
- Now either you make sugar syrup and add it to the flour or you can simply add sugar to the flour and mix nicely and then add water to it. Mix thoroughly such that no lumps are there and you can get a smooth textured halwa. when it's done the ghee will ooze out from the sides.
- Coming to our pooris, wash palak thoroughly and grind it to a fine paste by adding very little water, keep aside. Peel the beetroot and chop. Grind it to a fine puree
- Now take one cup of wheat flour out of 3 cups and add some salt, one tablespoon of oil,few ajwain seeds. Mix nicely, add palak paste and knead it into a beautiful green colour dough as we need for Puri. Keep it covered, now take another one cup of flour from the leftover do all the same as above instead of palak, add the beetroot paste, if you want you can seive the beetroot to get a clear beetroot juice add that to knead to dough and keep it covered.
- Now comes the last batch of dough. Add turmeric powder and knead for yellow dough. Three beautiful coloured dough are ready. Now divide half of each 3 roll each into a log keep each log together in a parallel line.
- Press them together a bit and now with the help of knife cut them together. Pick each cut to together roll as we roll for a normal purees while are you get a beautiful tri colour balls. Make rest the balls and keep them all covered so that they do not get dry. Heat oil fry them.
